Is anybody aware of any available SPI flash (e.g. AT25xx) support for
the AT91 bootstrap and UBoot (for the AT91SAM9G20)?

The ROM bootloader on the SAM9G20 supports AT25 parts, as does SAM-BA
and Linux. But, I can't find AT25 drivers for either AT91bootstrap or
for U-Boot. They support AT45 "dataflash" parts, but not "standard"
AT25xx SPI flash parts.
