Atmel Cortex-M3 for simple HMI?

I'm searching a solution for developing a HMI application, a small wall-mounted 2.4" touch panel.

I don't want to use more complex Cortex-A CPUs and I think the best option among Cortex-Mx is the Cortex-M3 family (SAM3).

It has an external parallel bus that can be used to interface a display module with an embedded controller with parallel interface. I think SAM3S-EK2 could be a good starting point to make some tests.

Before purchasing one ev-kit, I like to see some videos of GUI applications running on this ev-kit or similar boards with SAM3 MCUs.
